Chicken salad preferences are polarizing. The favorite Waldorf variety with nuts and grapes makes my stomach turn. I have no interest in seeing a piece of celery in the same location as a grape..and apples? GTFO. That might be something you’re into, but I’ll continue to steer clear.
I love a chicken salad with tarragon, or a purist version with just celery and mayo. This particular recipe strays a bit from purism, but with ingredients that provide for a winning flavor combination, in my chicken salad opinion.
Cashews steal the show in this quick and simple chicken salad (all chicken salad should be quick and simple…quit halving grapes). Wonderful and crunchy on day one, the cashews soften on day two and add a slightly sweet and nutty (obviously) textural component that keeps me coming back.
