Chicken Brine

Chicken is an affordable and versatile bird, but it lacks a deep flavor profile. I recommend brining your bird bits overnight, or at least for a few hours before setting about to cook. A brine consists of water, salt, sugar and acid and can be manipulated in a variety of ways to support the dish you are creating. Below are a few ideas for brine based on the type of dish you are crafting. For all brines, the directions are simple. Combine the ingredients together then add raw chicken. Refrigerate.

Ingredients for Basic Chicken Brine

  • 4 c Water
  • 1.5 Tbsp Salt
  • 2 Tbsp Sugar
  • 2 Tbsp Apple Cider Vinegar
  • Shake Shake Shake of Hot Sauce

Ingredients for Asian Chicken Brine

  • 4 c Water
  • 1/4 c Soy Sauce
  • 1.5 Tbsp Salt
  • 2 Tbsp Sugar
  • 2 Limes, juiced
  • 1 Tbsp Sambal or Sriracha
